Will veterinary officers get regularly assessed in fitness during their career with the army?

Hello,
In short, yes!
To remain deployable everyone in the Army must pass various assessments, usually on a yearly basis (although some tests must be done twice a year), this will include your fitness assessments. -

As a serving soldier, you are required to complete annual training including fitness testing.
There is scope for everyone in the army to conduct fitness daily, job dependant how much and when.
