Where are you sent once you complete you CMT training? Do you get sent to specific garrison or do you get to pick one?

You would have to go to a field hospital or medical regiment as your first posting to help improve your knowledge. I have heard that this may be changing soon to allow you to post anywhere with space for a CMT 2 which you will pass out of training as until you are ready for the CMT 1 course.
