If i enroll with the goal of becoming a tank crewman for the challenger 2, what will army life consist of? Will i still fill other roles? What will deployment be like? Etc.

When joining the Royal Armoured Corps as a crewman, you won't know for sure which regiment you will be going into.
After you complete your basic training, you will move to Bovington, The Royal Armoured Corps Training Regiment, where you will begin your initial trade training. It is whilst you are here that you will be allocated your regiment. If you have a preference, then this will be of course considered when allocating, but cannot always be guaranteed due to the Army needing to spread it's personnel evenly.
If you end up joining the Royal Tank Regiment, Kings Royal hussars or Queens Royal Hussars, then you will be working with the Challenger 2. During your time in Bovington, you will always start life as a driver, gaining the relevant civilian licences first, if required, such as Car and HGV licence. Before then learning to drive and maintain the vehicle for your regiment.
Once you arrive at your unit and have gained some good experience, you will then progress through each of the crew positions throughout your career, such as Loader, Gunner and then finally Commander.
As well as this, all Royal Armoured Corps regiments have a variety of other vehicles they may use. For example you may get opportunities to work on wheeled vehicles such as Panther, Land Rover and more, and other tracked vehicles too such as CVR(T). This will depend on your role in your unit which can change regularly so you can find the place you enjoy the most.
Deployments in the Royal Armoured corps can be very varied too. From deploying in your vehicles, to other dismounted training too, the opportunities are huge. You can also focus your strengths in the signals area, working with radios and and communications within armoured fighting vehicles which can lead you to slightly different deployments all over the world.
