What happens if I fail my AC when applying to AFC Harrogate, as I could be deferred I'm assuming I'd go as over 18?

This would be dependant on 2 things, 1 when the next intake date is for AFC as there are only intakes in March and September and 2 how long your deferral is for.
If your deferral end date is before the next AC date and the AFC entry date then you could still potentially go. If you fall outside of the AFC bracket then it would be adult entry.
