Hi, I'm hoping to enlist next year as an animal welfare assistant. Would I be able to get a bursary for university and enlist as a veterinary officer afterward if I did an access to higher education diploma in veterinary science during my apprenticeship? I'd love to have this as my career.

I like that you have this idea in place, unfortunately, you have the plan for to different elements of the Army that separate.
Animal Welfare Assistant is a Soldier role where as for access to those types of bursaries you'd be required to be a Veterinary Officer.
To that end you'd need to choose one or the other. If you confidence, intelligent and a natural leader then I'd suggest Officer route for the Bursary so that you gain 2 out of 3.
