I love the idea of being an officer passing out, leading a team and the whole ceremonial aspect of being a lancer however I do know that soldiers have a better time getting to drive vehicles and shoot stuff. As an officer will I get to do this or will I just be behind a desk

As an Officer, you'll still get opportunities to drive vehicles and shoot stuff, but it won't be your main focus.
To help you decide, it may be worth doing some more research: the Army jobs website is a good start, but be sure to look at the main Army page and social media, too (most regiments have an account).
Obviously, it depends on what drives you, but I'd definitely advise joining as an Officer seeing as you've done so much work at Uni. If you're still really unsure, you could consider joining as a Soldier and then look at commissioning later in your career.
