If you done bad in your gcse but got straight A's in your a level could I still apply to learn dentistry in the army?

Hello,
The entry requirements for Job roles are the qualifications, or otherwise, you must have in order to apply for that job roll. If you don't meet the entry requirements then you will not be able to apply for that job. You may chose a job roll with criteria that you do meet, enlist, gain the qualifications during service and then transfer to the role you originally wanted. This would obviously be a longer process.
