Connor, The Royal Engineers have fitters who work on all of the engineer equipment. https://apply.army.mod.uk/roles/royal-engineers/general-fitter . In unit they generally work alongside their REME counterparts who have a specific Vehicle Mechanic trade group. https://apply.army.mod.uk/roles/royal-electrical-and-mechanical-engineers/vehicle-mechanic . I suggest you get online and google both Corps and see what piques your interest most. Selfishly as REME I would say you have a wider opportunity to work on a larger variety of equipment across the breadth of the various Army units and capabilities rather than specifically engineer only units. Both are great jobs and ultimately it will come down to you as the individual to choose the job you feel will be most rewarding.
