I am looking to start an army apprenticeship and I am currently learning kickboxing / muay thai, are they available?
I am doing muay thai at the moment and I would like to continue with that if I could, but if it's not available what similar clubs surrounding combat sports are available? I know there is boxing and I will probably just do that if that's the only one they have

You won't be able to do an apprenticeship in kickboxing, muay thai, boxing etc. as the apprenticeships are aligned to the job role. For example, if you were to join as a Logistic Specialist (Supply) your apprenticeship would be in warehousing and storage.
However, you would be able to continue combat sports with Army Boxing and Army Martial Arts while you complete your apprenticeship.
