To become an Army doctor you must have a full medicine degree (already qualified as a doctor) and be registered with the UK general medical council. There is a student bursary available, for more information visit https://apply.army.mod.uk/roles/army-medical-service/doctor
Once you are qualified, you then need to complete the Army Officer Selection Process and after that you will attend the Commissioning Course Short at The Royal Military Academy Sandhurst. On completion of this, you will then attend the Army Medical Services Entry Officers' Course which provides you with the specific knowledge required to begin your career as an Army Doctor.
To answer your question about what GCSEs and A-levels you need, you will have to check with the university you wish to attend and confirm their entry requirements.

To get into a uni to do medicine you need A levels in biology, chemistry and one other subject (they accept pretty much any other subject bar two so just double check). They generally ask for As and Bs or above. Sometimes they look at you GCSE English which should be B or above. Also, on top of all that you need to do either a UCAT or BMAT test. Which one you do depends on which uni. However, most unis accept UCAT and only the "prestigious" ones accept BMAT. Your UCAT or BMAT score is used as a cut off point for interview so they're kinda vital.
