I'm about to start uni but dont want to be an officer and know this is the role for me. Will my degree matter? How hard is it to actually get into?

Whilst it's a very competitive role, and there might be a wait for a place on course, there's absolutely no reason why you can't be allocated a place. You will need to show a strong desire for the job role, and demonstrate an understanding of what the role entails. I would suggest applying for the role before your 3rd year at Uni; this gives you time to go through the application stages and allow for any wait time (however, things may change during this time).
Whilst you don't require a degree for this role, the years you spend at university can be valuable life experience, so I don't want to deter you from obtaining a degree. You should look up University Officers’ Training Corps (UOTC) which may be offered by your Uni; this does not obligate you to join as an officer, but will simply provide you with the opportunity to develop your understanding of military life and give you that extra experience.
