Operation Corded is the code name for the British military anti-poaching operation to help tackle the ongoing illegal wildlife trade in sub-Saharan Africa. There are no specific units that undertake this task but there are trades that would make it more likely that you could be involved in it. They are Military Police, Medics and Infantry. Be aware, by joining you could not guarantee that you would be definitely doing this role and if you did it might be only for 6 months or so. There would be opportunities that you might be able to volunteer for but do not join the army expecting to be doing this as your main job.
