Dog handler role: what does a 'typical day' in the role, and how often/long are the deployments?

The days for this can be long especially if on duty as you will be required to check a number of dogs especially if its over the weekend. Apart from that you will be responsible for the day to day management of your allocated dog / dogs ensuring that they are trained and you build a good relationship with them.
In regards to deployments these will come up relatively often but it depends who are are attached to at the time deployments vary from a few weeks up to around 6-8 months depending on capability and requirements. This may be slightly different due to animals but that is typically the normal ranges for deployment.
