I have a D grade in GCSE English (I do have other c+ GCSE's but not listing them all), as well as a BTEC in Music, an NVQ l3/apprenticeship completion as an Electrician, and a functional skills level 2 in English + IT, I was looking at the operator technical intelligence role, hopefully I can eventually train to be a linguist - I am particularly interested in this as I have a keen interest in languages and I like learning languages as a bit of a hobby, and so the thought of learning new languages and being paid, (albeit possibly not so useful operational ones) really interests me. I think I would be well suited to the role and I would enjoy it a lot, however I believe I am being let down by my lack of an English grade C, I know with testing I could probably test at a C or even higher, but I just didn't try hard enough when I was 16. Will the army recognise functional skills level 2 as an equivalent and is there any flexibility on this? (Given it's also a 'Priority' role?)

Functional Skills qualifications are recognised by the Army as we all do these in Maths and English and are required for certain promotions. In terms of your individual case and potential job choice, it would really be up to whoever is dealing with your application and your performance in Army selection. If you haven't already, start an application and see how you get on. You will be assigned someone that can help you along with the process once you begin.
