Good Morning Liam and thanks for your question,
I unfortunately can't speak from my own experience, but generally you will have some choice in where you are posted.
Generally if you are part of a unit which regularly moves around such as the Royal Engineers, Royal Army Medical Corps and Adjutant Generals Corps, then you will be allowed to have 3 preferences for where you would like to be posted. Of course, not everyone can get their top choice because the Army has to ensure their personnel are spread to where they are required.
Due to this, it can't be guaranteed where you will go for each of your 2/3 year postings , but generally if you miss out on one of your top preferences for your first rotation then you will be more likely to get them for your next rotation and vice versa for if you managed to get your top choice the first time around.
What i would say though, is that there are no "Bad postings", you can find yourself in some amazing parts of the country and across the world with different people from all kinds of backgrounds and some amazing opportunities too to improve your skills in different ways that you may never have realised before.
I hope this helps, and I'm sure that one of my RMP Colleagues may be able to elaborate further with specific knowledge to this job role, but as a general rule, this is how it will work for you.
