Can you start off as a HR specialist soldier and progress to become an officer with time?
Do I have to start with the officer training or is it possible to join as specialist and work my way up with time?

Absolutely. This is possible in all trades within the British Army. If you have the aptitude and want to achieve this, you can. I know of several officers who were soldiers and worked through the ranks to become commissioned officers. It is also possible that as a soldier, early on in your career, you can be identified as having officer potential.
